Eggless Millet Banana Walnut Cake

Ingredients:

  • 1 cup millet flour
  • 1/4 cup wheat flour
  • 1/4 cup jaggery (powdered or grated)
  • 2 ripe bananas, mashed
  • 1/2 cup mixed nuts (such as walnuts, almonds, and cashews), chopped
  • 1/4 cup vegetable oil or melted coconut oil
  • 1/2 cup milk (or any plant-based milk for a vegan option)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1.  Preheat your oven to 180°C (350°F). Grease a cake pan or line it with parchment paper.
  2.  In a mixing bowl, sift together the millet flour, wheat flour, baking powder, baking soda, and a pinch of salt. Stir to combine evenly.
  3.  In another bowl, mash the ripe bananas until smooth. Add the powdered or grated jaggery, vegetable oil (or melted coconut oil), milk, and vanilla extract. Mix well until the jaggery is dissolved.
  4.  Pour the wet ingredients mixture into the bowl with the dry ingredients. Stir until just combined. Do not overmix.
  5.  Gently fold in the chopped mixed nuts into the batter until evenly distributed.
  6.  Pour the batter into the prepared cake pan. Spread it evenly with a spatula.
  7.  Place the cake pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
