Ingredients:
- 1 cup broccoli florets
- 1 cup green peas (fresh or frozen)
- 200g paneer (Indian cottage cheese), crumbled or grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 green chili, finely chopped
- 1 tablespoon chaat masala
- Juice of 1 lemon
- 1 tablespoon besan (chickpea flour)
- Salt to taste
- Cooking spray or oil for air frying
Instructions:
- Steam the broccoli florets and green peas until they are tender. Drain any excess water and allow them to cool.
- In a mixing bowl, mash the steamed broccoli and peas using a potato masher or fork until they are roughly mashed but still have some texture.
- Add the crumbled or grated paneer, finely chopped onion, minced garlic, grated ginger, chopped green chili, chaat masala, lemon juice, besan, and salt to the mashed broccoli and peas mixture. Mix well to combine all the ingredients evenly.
- Take a small portion of the mixture and shape it into a round or oval kebab. Repeat with the remaining mixture to make more kebabs.
- Preheat your air fryer to 180°C (350°F) for about 5 minutes.
- Lightly grease the air fryer basket with cooking spray or oil. Place the kebabs in the basket, leaving some space between them. Spray the tops of the kebabs with a little more cooking spray.
- Air fry the kebabs at 180°C (350°F) for 10-12 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on the outside.
- Once cooked, remove the kebabs from the air fryer and serve hot with your favorite dipping sauce or chutney.
